Dark ruby red colour. Intense and elegant aromas of ripe fruit, raisins, black Cherries and plums in alcohol. Sweet and warm aroma, velvety and round.
Pairings. wine for meditation, ideally enjoyable after meal. Traditionally paired with plain pastries and biscuits, it pairs particularly well with good dark chocolate.

Harvesting method: manual, of selected bunches, at the end of October. Slow grape withering in the drying room until November

Crushing and pressing of de-stemmed dry grapes in February. Fermentation at a controlled temperature of 10°C. Maceration of the must for 20 days, with daily pumping-over
Ageing
the wine is aged in tonneaux for 6 months and then a further 12 months in steel tanks. It is then left to mature for at least 6 months in the bottle before sale.

Colore rosso rubino carico con riflessi violacei. Profumo intenso ed elegante di frutta surmatura, ciliegie, prugne sotto spirito e ribes. Gusto dolce e caldo, avvolgente e vellutato.
Abbinamenti. Vino da meditazione, ottimo a fine pasto, anche da solo. Tradizionalmente abbinato alla pasticceria secca, si abbina particolarmente con del buon cioccolato fondente.

Guyot, con 5000 ceppi per ettaro, 8 gemme ceppo e inerbimento dei filari. Età media delle viti: 15 anni.
Raccolta manuale, di grappoli scelti nel periodo di metà ottobre, con lento appassimento in fruttaio fino a fine novembre
Vinificazione
Pigiatura e diraspatura delle uve. Temperatura di fermentazione 10°C. Durata della macerazione: 20 giorni. Rimontaggi e follature giornaliere
Affinamento
Maturazione in tonneaux per 6 mesi e in acciaio per 12 mesi. Affinamento in bottiglia per 6 mesi prima della commercializzazione.
Resa: 15 hl/ha.
